Literature References: Prepd by shaking glucose wih acetone contg 1% HCl: Fischer, Rund, Ber. 49, 90, 93 (1916). Improved procedure (90% yield) using 85% H3PO4 and anhydr ZnCl2 in a mechanically stirred suspension of glucose in acetone: Glen et al., US 2715121 (1955 to Am. Home Prod.).
Properties: Needles from ether or petr ether. Bitter taste. mp 110-111°. Sublimes. [a]D20 -18.5° (c = 5). Reduces Fehling's soln. One part dissolves in about 7 parts of boiling water and in about 200 parts of boiling petr ether. Freely sol in chloroform, alc, acetone, warm ether. Precipitated from aq soln by NaOH soln. Is not split by yeast or emulsin.
